Recipe for making macaroons or almond cookies

Macaroons can be cooked according to the following recipe. Scald the almonds with boiling water, peel and dry. Finely grind dry almonds, gradually adding proteins and sugar. Mix the almond mass well, warm it up, then cool slightly, add flour and mix. Then transfer the almond mass into a confectionery envelope or syringe and squeeze out in the form of cakes onto a sheet of paper. Place paper with macaroons on a baking sheet and bake in a non-hot oven.

When baking, the cookies should dry well and brown. Transfer the finished macaroons, along with paper, to a napkin moistened with water. This is to make it easier for the cookies to separate from the paper. Almond cookies can be served as such, or you can fasten them in pairs with the flat side to each other. As a bond, you can use hot marmalade, jam, chocolate.
